Vegetable Loaf
NICKY CHANDLER- 1¾ cups coarsely grated carrots
- ¼ cup finely chopped parsley
- ½ cup coarsely grated zucchini
- ¼ cup Trim Pure Soy Protein or Perfect Soy Protein
- 1 small red pepper (100g)
- 2 small sticks of celery
- ¼ small spanish onion, finely chopped
- 2 eggs, lightly beaten
- 4 eggs whites, ligtly beaten
- ¼ cup creamed cottage cheese
- 2 tablespoons low-fat mozzarella cheese
- 3 tablespoons stale rye breadcrumbs or oat bran
- 1 teaspoon mild curry powder
- ½ teaspoon sweet chilli sauce
Pre heat oven to 180C.
Line an 11cm X 18cm pan with foil.
Combine all ingredients in a bowl and mix well.
Bake for 50 minutes. Stand for 10 minutes before removing from pan, remove foil carefully.
Serve with a crispy winter green salad and a dollop of fresh tomato salsa or tzatziki yoghurt dip.
Makes 6 chunky slices.
