Tuna Melt Casserole
AUSSIE BODIES TEST KITCHEN- 1 teaspoon oil
- 1 large tin of tuna in water, drained and mashed
- 1 cup of grated cheddar cheese
- 3 eggs
- 3 tablespoons Trim Pure Soy Protein or Perfect Soy Protein
- 1 teaspoon garlic powder
- ½ teaspoon mixed herbs
- ¼ cup ricotta cheese
- 1 medium sized tomato (half thinly sliced, and half diced)
- Pepper to taste
Preheat oven to 200C and grease a 9-inch shallow dish with the oil.
In a large bowl combine the eggs, tuna, ricotta cheese, ¾ of a cup of cheddar cheese, protein powder, herbs, diced tomato and garlic, and mix well.
Pour mixture into the prepared greased shallow dish, pat down firmly and place sliced tomatoes on top, sprinkle with remaining cheddar cheese and some pepper.
Bake for about 25 mins, or until brown and bubbly.
Serve with a tomato relish and green leafy salad mix.
